This November 18th saw the return of Tamper Tantrum to Barista Guild of Europe’s CoLab seminar series, this time hosted in the beautiful city of Paris with the support of FrogFight. Each CoLab program is built around a program of compelling educational content (that’s us!) sandwiched in between two half days on either side to discover the host city’s coffee community and culture. This year’s second event, like CoLab: Prague, featured the six speakers below, Q&A, and panel discussions.

About FrogFight: Tamper Tantrum has been no stranger to the community building Frog Fight has accomplished in Paris: ever since their first Frog Fight throw-down was held at Café Lomi, organised by Thomas Lehoux and David Flynn, it’s been a name synonymous with building a community and improving specialty coffee in a city that previously had little to offer those seeking a 3rd wave experience.

Today, Paris is full of specialty coffee shops: a testament to Frogfight’s influence in developing the Paris scene. We were very honoured that they were so excited, from the very beginning, to work with us as a way to revive FrogFight from its brief hibernation these past two years. Made up of baristas and roasteries around Paris, FrogFight is a shining example of what can be accomplished when community comes together.

For this particular event, three of Frog Fight’s roastery members—Belleville Brûlierie, Coutume, and Café Lomi—are behind the local know-how, on-the-ground organisation, and venues of CoLab: Paris.

Belleville Brulerie – Paris
Of all the FrogFight members, we know Belleville Brûlerie the best: one of the four folks behind the Parisian roaster, David Flynn, was a speaker at our first ever international Tamper Tantrum back in 2012. Titled “Jus de Chausette”, David spoke about his philosophy that specialty coffee would be best introduced and shared, particularly within a well-established café culture based on espresso, as filter coffee, or “sock juice”—a concept that is still referenced in Belleville’s “à propos” today!

David and Thomas, the organisers behind the first-ever Frog Fight, have been our men on the ground for this week’s event in Paris. We’d like to thank them—profusely—for their patience with our question-filled emails as we worked out the logistics for Wednesday’s Tamper Tantrum.

Coutume Instituutti
Coutume was first founded as a coffee roaster in 2011 by Antoine Nétien and Tom Clark, but has since grown to encompass five specialty coffee shops worldwide: two in Paris (Babylone and Instituutti), two in Tokyo (Futakotamagawa and Aoyama) and one in Osaka (Osaka).

Coutume have been essential to this week’s event: they, with the support of the Finnish Institute are closing their Insituutti shop on Wednesday, Nov 18 in order to provide BGE and Frog Fight with a place to welcome attendees from across Europe. They’ll also be hosting a cupping on Thursday morning (10:00-12:00), featuring twelve Yemeni coffees showcased by Mokhtar Alkhanshali.

Coutume Instituutti is a beautiful venue, eminently suited to the kind of lectures, discussion, and community-building that will be taking place this weekend—thank you to Antoine, Tom, and the Coutume team for hosting us in such a beautiful venue!

Café lomi
The first-ever FrogFight was held in Café Lomi’s small space in the 17th, back when it was just Aleaume Paturle and Paul Arnephy. Today, Café Lomi now calls 3 Ter Rue Marcadet in the 18th home, keeping their roastery, coffee school, retail shop, and coffee shop all under one beautifully turned-out roof.

This very space will be host to one of the cuppings taking place on Thursday morning. Thank you to the team at Café Lomi for offering up some of their beautiful space to host a CoLab: Cupping!
